I'd recommend to look at one or two Let's play-Videos for both games. But it comes with the price of more time you need to invest to get something done. In Planet Coaster you can do all kind of stuff, your imagination is probably the only limit.
Parkitect is less complex, but it's easier to achieve something and you still have a lot of tools to play with and get a nice looking park. If your goal is to manage a park while being able to customize rides, shops and create coasters in an easier (but not overly simplified) way, always with the goal of attracting more customers and making more $$$, Parkitect is your game. If you are looking for great sandbox game, where you can decide on every detail of your coasters and decorations, willing to invest more time in the building element while not having an emphasis on the management part - play Planet Coaster.
